I make a homemade pizza that could make a grown man cry it's so damn tasty! What you don't see in the picture above is that the fresh mozzarella cheese and roasted grape tomatoes are covering up is a bacon marmalade. Yeah, I said bacon marmalade... and as we know everything is better with bacon! Even pigs know that.

Here's the recipe:

I package of dry yeast (preferable Fleishmann's Dry Pizza Yeast)
2 and a half cups of flour
10 strips of bacon
1 onion
3 cloves of garlic
2 tablespoons of hot cherry peppers (Any hot peppers will substitute. In the past I've used Wickles Pickles pepper spread)
2 tablespoons of sugar
2 tablespoons of red wine vinegar
A dozen leaves of basil
12 oz fresh mozzarella cheese
1 lb grape tomatoes

Dissolve the yeast in a 1/4 cup of warm water and add a teaspoon of sugar. Wait ten minutes until foamy. Then fill up the cup with more warm water until it's a full cup. In a separate bowl add the 2 and a half cups of flour and make a well in the middle. Pour in the wet ingredients along with 2 teaspoons of olive oil. Fold the ingredients together until all of the flour is incorporated. Then knead until you have a smooth ball of dough. Oil another large bowl, put in your dough and cover with a damp towel (so the dough doesn't dry out) and let it sit for a few hours for the dough to rise (it'll more than double in size) and proof. Add a teaspoon of olive oil to grape tomatoes in a non-stick baking pan and roast at 500 degrees in the oven until the tomatoes become soft (about 10-12 minutes). Dice the bacon and render until not quite crispy in a frying pan. Add chopped onion, garlic and hot cherry peppers. Saute until vegetables begin to soften then add the vinegar and sugar. Continue to cook until the consistency of jam. Stretch out your dough on a floured surface. Spread bacon marmalade over the surface. In this order top with basil leaves, roasted grape tomatoes and cubed fresh mozzarella. Slide pizza onto a pizza stone that's been preheated in a 500 degree oven. Place back in the oven and cook for 10-14 minutes. Remove when crust becomes golden. Slice and serve!
