Girl dinner is an idea that has gained a ton of traction over the course of the last two years. It is basically the concept that women will find whatever food they can in their homes and make a full meal out of it. Meals range from a box of crackers and a jar of olives to a fancy steak salad and everything in between.

The other day, a couple of girlfriends and I spent the day taking our dog's to Norm's, then headed to Canyon Creek for more sunshine. Afterward, we ended up at one of their houses. We were hungry, but the idea of spending money on a pizza delivery just felt unnecessary. My friend said, "I have mushrooms, tomatoes, heavy cream, and pasta...will that make anything?" I love a good challenge, so I jumped in and threw this concoction together.

Mushroom & Tomato Pasta

Ingredients

  • 2 cups of dry egg noodles
  • 1 cup of sliced mushrooms
  • 1 cup of grape tomatoes, sliced in half
  • 1/4 cup of heavy cream
  • 2 tbsp of tomato paste
  • 1/2 cup of chicken stock

Directions

  1. Cook egg noodles as directed on the package, drain, and set aside.
  2. In the same pot, add some oil or butter, then the sliced mushrooms. Cook until softened.
  3. Add the sliced tomatoes and continue to sautee for 2 minutes.
  4. Sprinkle with some seasonings like salt and pepper or Italian seasoning.
  5. Add the tomato paste, continue cooking for one minute, then add the heavy cream.
  6. Add the pasta back into the pot, then add chicken stock as necessary to reach desired consistency.

Girl dinner is all about using what you already have in your house. Substitute any vegetables for the ones I used, milk for the heavy cream, whatever your heart desires.
