Saint Patrick's Day is right around the corner and I am getting pretty excited. Not just because I'm Irish.  Not for the drunken bar frenzy that some might participate in.  Although there's nothing wrong with that.   However, I'm excited about my dinner.  Or rather, what my dinner's going to be on St. Patty's Day.  Can you guess what it is?

If you guessed corned beef and cabbage.  You've guessed right!  I like to cook it in a crock pot for about 5 hours,  depending on how it's all coming together. Covered in the seasoning that comes with the corned beef. I love it!

Well apparently, this is not everyone's favorite.  I started talking about this in the office today, and lo and behold, I found at least 5 people here that not only didn't care for it, but actually shook their head in disgust.  I couldn't believe it!  I thought everyone loved this dish.  I mean what's not to love, right?  Yummy, salty corned beef with just a touch of that delicious fat trim.  Gently cooked cabbage, potatoes and carrots.

So what else is there to eat on St. Patty's Day to celebrate?  I've had this as our St. Patty's Day tradition so long that I guess I didn't even realize that there were other options.  Do you have any good recipes that I could try as well?  Comment and let me know!
